grilled lamb skewers with spiced mint marinade

Try this grilled lamb skiwers...with spiced mint marinade.....tasty lambs!

INGREDIENTS
  • 1 cup (packed) fresh mint leaves, coarsely chopped
  • 3/4 cup orange juice
  • 1/2 cup (packed) golden brown sugar
  • 1/4 cup dry Sherry
  • 1/4 cup apple cider vinegar
  • 3 garlic cloves, chopped
  • 1 tablespoon finely grated orange peel
  • 1 tablespoon chopped peeled fresh ginger
  • 2 teaspoons Szechuan peppercorns*
  • 1 teaspoon Asian sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon pink peppercorns, crushed
  • 1 1/2 pounds 1-inch cubes trimmed leg of lamb (cut from 2 1/2pounds of untrimmed leg of lamb)

Preparation
Combine all ingredients except lamb in medium bowl for marinade. Thread lamb onto metal skewers. Place skewers in 13x9x2-inch glass baking dish. Pour marinade over. Cover with plastic wrap; chill overnight.
Transfer lamb skewers to baking sheet. Pour marinade into small saucepan.Prepare barbecue (medium-high heat). Sprinkle lamb with salt and pepper. Grill to desired doneness, turning, about 8 minutes for medium-rare. Transfer to platter. Boil marinade 5 minutes. Strain, then spoon over lamb and the grilled lamb skiwers are ready for serve....enjoy it !

  • 1/4 cup olive oil

  • 2 tablespoons minced garlic
  • 2 teaspoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 8 1- to 1 1/4-inch-thick loin lamb chops (about 2 1/2 pounds total), fat well trimmed
  • 2 tablespoons honey

Preparation
Mix first 7 ingredients in large glass baking dish. Arrange lamb chops in single layer in dish; turn to coat. Cover and refrigerate at least 2 hours, turning and basting often. (Can be prepared 1 day
ahead. Keep chilled.) Prepare barbecue (medium-high heat). Transfer lamb to plate. Mix honey into marinade. Grill lamb to desired doneness, turning and basting with marinade often, about 10 minutes for medium-rare.

INGREDIENTS
  • 4 tablespoons chili powder
  • 3 tablespoons chopped fresh cilantro
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 1/2 teaspoons garlic powder
  • 8 1-inch-thick lamb loin chops (about 2 3/4 to 3 pounds total)
  • 1 tablespoon olive oil
  • 1/4 cup chopped shallots
  • 1 tablespoon chopped garlic
  • 2 cups dry red wine
  • 2 cups beef stock or canned beef broth
  • 4 tablespoons (1/2 stick) chilled butter, cut into 1/2-inch pieces
Preparation
Combine 2 tablespoons chili powder, cilantro, oregano, cumin and garlic powder in small bowl. Coat lamb chops with spice mixture. Place lamb chops in glass baking dish. Cover and refrigerate 8 hours or overnight. Heat 1 tablespoon oil in medium saucepan over medium-high heat. Add
shallots and garlic and sauté 2 minutes. Add red wine, beef stock and remaining 2 tablespoons chili powder. Boil until sauce is reduced to 3/4 cup, about 30 minutes. Remove sauce from heat. Add butter 1 piece at a time, whisking until melted after each addition.
Prepare barbecue (medium-high heat) or preheat broiler. Grill or broil lamb chops to desired doneness, about 6 minutes per side for medium-rare. Place 2 lamb chops on each of 4 plates. Spoon sauce over lamb and the grilled lamb chops is ready to serve.

INGREDIENTS

  • 3/4 teaspoon curry powder
  • 1/4 teaspoon turmeric (optional)
  • 1/8 teaspoon cinnamon
  • 1/2 teaspoon black pepper
  • 1 1/2 cups water
  • 1 1/4 teaspoons salt
  • 2 tablespoons unsalted butter
  • 1 1/4 cups couscous (8 oz)
  • 1 1/4 lb (1/2-inch-thick) lamb shoulder blade chops
  • 1 cup plain Greek yogurt
  • 1 medium zucchini (1/2 lb), coarsely grated (about 1 cup)
  • 1/4 teaspoon dried mint, crumbled
Special equipment: a well-seasoned large (2-burner) ridged grill pan

Preparation

Heat lightly oiled grill pan over moderately high heat until hot but not smoking.

Meanwhile, toast curry, turmeric (if using), cinnamon, and 1/4 teaspoon pepper in a small heavy saucepan over moderate heat, stirring constantly, until fragrant, about 1 minute. Add water, 1/2 teaspoon salt, and butter and bring to a boil. Place couscous in a heatproof bowl and pour in boiling water mixture, then quickly cover with a plate or plastic wrap and let stand 5 minutes.

While couscous stands, pat chops dry and sprinkle on both sides with 1/4 teaspoon salt and remaining 1/4 teaspoon pepper. Grill chops, turning over once, about 6 minutes total for medium-rare. Transfer to a serving plate.

For raita, stir together yogurt, zucchini, mint, and remaining 1/2 teaspoon salt. Fluff couscous with a fork and serve with lamb and raita...and the grilled lamb chop is ready for feasts !. Nice !

INGREDIENTS
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons Cognac or brandy
  • 3 garlic cloves, minced
  • 2 1 1/2-pound racks of lamb, excess fat trimmed
  • 1 cup chicken stock or canned low-salt chicken broth
  • 5 tablespoons oyster sauce
  • 1/4 cup fresh lemon juice
  • 1 tablespoon sugar
  • 1 teaspoon Chinese five-spice powder
  • 2 green onions, thinly sliced
  • 1/2 cup (1 stick) chilled butter, cut into small pieces

INSTRUCTIONS
Whisk first 5 ingredients in large glass baking dish to blend. Add lamb; turn to coat. Cover and refrigerate overnight.Prepare barbecue (medium-low heat). Grill lamb to desired doneness, turning chops occasionally, about 25 minutes for medium-rare.
Meanwhile, boil chicken stock and next 4 ingredients in small saucepan until reduced to 3/4 cup, about 12 minutes. Reduce heat to low. Add green onions and butter, stirring until butter melts.
Cut lamb between ribs into chops. Place chops on plates; spoon sauce over...and the grilled lamb chop recipe is ready to serve...enjoy it !
