Set garlic cut-side down on a sheet pan and roast until it is soft to the touch, about 30 minutes. Let&lt;br /&gt;garlic cool for 5 minutes, then squeeze the roasted cloves out of the garlic and into a bowl. Dijon mustard&lt;/li&gt;&lt;li&gt;3 tbsp. olive oil&lt;/li&gt;&lt;li&gt;1 tbsp. To make the honey-hoisin marinade: In a medium size bowl, mix together the soy sauce, lemon juice, honey, hoisin sauce, mustard, olive oil, sesame oil, onions, rosemary, parsley and pepper. Stir until well combined. The marinade can be placed in a lidded glass jar and refrigerated for up to 5 days. Place couscous in a heatproof bowl and pour in boiling water mixture, then quickly cover with a plate or plastic wrap and let stand 5 minutes.&lt;br /&gt;&lt;br /&gt;While couscous stands, pat chops dry and sprinkle on both sides with 1/4 teaspoon salt and remaining 1/4 teaspoon pepper. Grill chops, turning over once, about 6 minutes total for medium-rare. Transfer to a serving plate.&lt;br /&gt;&lt;br /&gt;For raita, stir together yogurt, zucchini, mint, and remaining 1/2 teaspoon salt.
